The log level (by default) will grab that basic data ... enabling verbose logging just logs more.

All BlackBerry Browser traffic goes through the MDS-CS Service; hence through the BES.

The install / tech guides explain MDS-CS to a certain degree, but I don't know of a specific doc focused on MDS ... Other than the MDAT logs, you're not logging anything regarding MDS on the BES by default.
