But a lot, I believe the number is +60% are still on 2003, but will be going into extended support once 2010 comes out, and they're going to want to skip 2007.
I think you have the wrong idea of the market, companies don't want to spend tens let alone hundreds of thousands into a new mail server product that has just come out and hasn't had been broken in yet. So no big corporate office is doing to switch to Exchange 2010 until there is at least SP1 or SP2, or until their support contracts run out with Microsoft with what they have now.

A colleague of mine who works on EMC's elite support team has already seen banks and other fortune 500 companies switching to Exchange 2007 which would mean they too have locked themselves in with a long and lengthy service contract with Microsoft so Exchange 2007 will still have a few years of shelf life in it even after Exchange 2010 comes out which no one will touch initially, well except for the smaller companies who have no clue what they are getting into. I work for one who has been running Exchange 2007 since it came out (before I started working for them); was I sure glad Microsoft released SP1 when they did, geez! :o)

btw, EMC's elite support team only deals with companies have 4000+ users around the world and are Microsoft Platinum partners.

It will be interesting to see how RIM manages to intergrade BES with Exchange 2010 as I am sure Microsoft will completely move away from the way RIM takes to Exchange now. Also I would hope that RIM engineers take the they have now to build a better platform and test it on Exchange 2007 as I am sure most of the basic component Exchange 2007 will be in Exchange 2010 but made to look differently still operating the same way and move away from doing the old school way otherwise say bye bye to RIMs market share as companies will not tolerate that they have to continue to run out dated software in the back-end so people can get their messages on their Blackberries.

Again I say this... RIM and Microsoft should really team up and work together offering some kind of built in component to Exchange. I am sure between Microsoft and RIM they can figure out something when it comes to licensing and royalities as RIM and MS are very good at making money in those areas. :o)
