Not sure why you want to "turn-off" the send/receive, but if you are a BIS type, then KonTiki idea is probably your best bet, if you are a BES user, then I don't know if you can ask your admin to turn it off when you are out of the office.

Are you concerned about roaming charges while on vacation?

I know you can turn-off the "send", but that is a personal choice You could also choice to just not go into the mail folder or hide the mail folder so you can't see it.

Maybe you just need to tell your boss you left it at home

You can probably take your sim card and put it in an old cellphone you have laying around the house.
