You can delete almost anything (system modules excepted) by deleting the modules one by one.
Some software that has been added via the desktop can be removed by deleting on the handheld from the Applications menu.
However, I have seen cases where software installed via desktop then removed via handheld simply reinstalls itself on the next synch.
I've found it to be cleanest to delete software the way it has been added.
