Then I load all of that back onto my 8800 from my desktop manager from the backup file, and reconnect to the BES on the 8800, and that's it. Right?
You can wipe the device of all data yourself - you don't need the BES Admin to do it for you. Options (icon), Security Options, General Settings, press the menu button and click Wipe Handheld.

If your company has 4.0 or higher BES, you don't really need to reload any data using the Desktop Manager (unless you want to restore ALL of the mail that was on the old device to your new device....but you'll get the last 5 days worth of email anyway).

The BES 'wipe' (aka, 'kill') is primarily meant to be used for devices that have been lost or stolen and ya can't get your hands on it to remove the data.
