Lo, and there was in the east a FAQ!
BlackBerry Glossary - BlackBerryFAQ (http://blackberryfaq.com/index.php/BlackBerry_Glossary#Service_Book)

In your BB... Options > Advanced > Service Books.

I have not seen a list elsewhere.

can I use service books from different carriers?

You will only get the service books from the carrier with which you have a BIS or BES service. That is, if you are on AT&T, you will get AT&T's service books, there is no way for you to get service books from Tmobile.

Is there something you are trying to do, that you have not asked the question for?

Not necessarily, rather i was wondering if i could get more applications other than what was offered by my carrier. Just looking for ways to upgrade my device.

Applications? yea, all over, look in our Aftermarket Software section here, as well as the FAQ site, Third Party Applications link. You don't need service books.
