...gsm is the cellular network technology (akin to cdma for verizon) your carrier uses, whereas EDGE (or edge) is the type of network connection you currently are experiencing (similar to EVDO or 1x on verizon).

they both should show both. GSM is the basic network, and it has GPRS layered over that, and EDGE layered over both (in most areas). The BlackBerry will automatically detect the highest speed network available and connect to it.
