If I restore My BB back to before I loaded the update using a saved backup file....will I have to go through the whole setting up my email account etc...?

Email account settings are all maintained on a server. You would need to be more descript in what type of email accounts you are referring to for more meaningful info. In short, no, you should not need to do anything after it is setup. If it is on BES you will need to reactivate it with the BES, if you are using BWC you may need to re-send the service books to the device.
