I was able to successfully sync a playlist from my Mac to my Curve 8330.

I connected a mini-usb headset (stereo phones with dangley microphone) that I used with my previous Moto Razr) and played a tune. It came out of the speaker phone function instead of the stereo ear buds.

How can I get the phone to use those earbuds???

You need to use the 3.5mm headphone jack, not a USB.

Is there no accessory that would do what the mini-usb setup does, ie. provide stereo headphones with some sort of microphone/mouthpiece so it also can be used for calls?

You should have gotten one with your new device. . .

Any 3.5 mm head phones should work in your Curve, I've 3 headphones. The OEM one, One for running (Sony) and another for just normal stuff (Altec Lansing).
