is it possible to move icons up or down.. so that i can put verichat next to mail? also would like to move a few others

Scroll to the icon you want to move. Press the ALT key and press the trackwheel. A menu with Move Application should appear. You can now move the app around. Notice there is also a hide option.

Using the T-mobile 7100t ...I searched and found how to move an icon around in the same "level" of a menu, but how do I move it up a level? or into a different one?

You can't move an icon from one menu to another on the 7100.
