We need to make an ip address change to the exchange server. Will this effect BES at all? I forget in the installation portion if I actually entered the hostname or the ip address of our exchange server.

The IP can change, the MAPI profiles use the hostname to resolve the mailbox. You should be fine with changing the IP.

I'd also recommending rebooting the BES after the change as your MAPI sessions will break and it'd be best to flush them entirely to re-create new ones with a reboot.

With the amount of big things you get ... I'm pretty sure its ok that your fingers + brain miss the little things every once in a while.
