Hi to everybody...
After having used the search function a lot (and having thus read quite a lot), I've come to the conclusion I'm dumb enough not to be able to "do-it-myself".
It happened to me also when I had to install BPS: I had to wait for a setup video to appear on RIM's website to be able to successfully complete the procedure, since I'm not really such an IT expert (while feeling comfortable among IT matters...).

The problem:
[40700] (05/15 18:22:35.933):{0x1900} {name@domain.it} Receiving packet from device, size=154, TransactionId=-1676255375, Tag=8429, content type=CMIME, cmd=0x3

Well, I've come to the conclusion that this user (the only one I have on my BPS, which is the ENTERPRISE TRIAL version, installed on a Win2003 SB Server) is the problem for two main reasons:
- it is me
- it is an Administrator
I've already tried applying what I found here:
KB04707 - Unable to send email messages because Send As permission has been revoked - Port3101.org : Your BES Connection (cannot post links yet...)
but it seems nothing changes, as the log still reports the same problem...
I would like to avoid removing the user from Exchange and no, I cannot make this user a normal user...
Also, since I'm completely on another planet when speaking of ACTIVE DIRECTORY and POLICIES, should you wish to help me, please, take the time to exactly explain me WHICH buttons to press, as really I cannot understand anything about AD and POLICIES... (while having a rough idea...).
