I have the same issue. It only happens when users send or reply to certain recipients. BES 4.0 sends messages in UTF-8 format. Some email clients e.g. gmail.com does not support UTF-8.
So far I have found the only option is to control default message format with Exchange by using uuencode as the default.

This originally fixed the problem for me in Exchange 2003, but the ability to set UUEncode within the Exchange server is no longer possible in Exchange 2007 - it is only possible on the Outlook client (which doesn't help since BES is the client in this situation).
I have a software application that doesn't support UTF-8 e-mails being sent to it, is there a way I can make my BES 4.1 encode in something more compatible?
