thank you. I just found the 4.5 beta for 8320. Do you know if it will work on the 8300?

No!

Please look around the forum here and you will see hundreds if not thousands of questions where it is answered that the OS must match the model.

When changing the OS (updating) can you do a restore for apps and data or do you need to start fresh with the new OS?

The upgrade of the OS will ask you to backup and restore. A wise person would do that separately and apart from the upgrade, just in case something goes awry, and then you absolutely have a good back up, from which to restore.
