Default Exchange migration

I've never had to move 20 users from godaddy to intermedia. Personally haven't had any hands on with BES (other than hosted) and this is the 1st scenario where I've had to move devices from 1 BES to another.

I have a few questions/concerns I'm hoping you'll be able to elaborate on. FYI all users are running newer devices with OS6

1. I assume I do a remote wipe before changing MX records, and reactivate the devices in the new host's control panel after activating the account and adding the BB pin in control panel - or is there a better way?
2. Other than Exchange mailbox data, what gets deleted in a remote wipe?
3. I don't want users to lose videos, photos, applications and their settings and then blame yours truly and I'm telling them to backup before we migrate.

Any help/insight is appreciated!

Everyhting what is stored on device will be wiped.
Contents on media card can be wiped if u check box in secutiry wipe.
