This is not a typical thread about how to change an email address.
Let me explain what is happening now.
Currently I have a Nextel 7520 setup w/ BIS v.2

my email, *@mydomain.com is forwarded to .

My blackberry is set to get my gmail

I like the fact that gmail is almost as fast (if not faster) than BES.

Is there any way I can make my outgoing email look like its coming from and still have my email coming in from gmail?

How i want it to work:
In: mydomain -> gmail -> bb
Out: bb (as my domain email) -> gmail -> recipient.

Do a search in Aftermarket Software for 'send-from' and you should find something that may work. PocketDay comes to mind.

It should work to just update some information in your bis account. Log in BIS and click the edit icon beside your gmail account. Update the E-Mail field and click Save. I would suggest resending service books at this point 'Click Service Books -> Send Service Books'. This should update the information you're looking for. Worse case scenario it doesn't do what you want it to and put it back the way it way. You shouldn't need a third party option at this point.
