Default BlackBerry simulator - rimpublic.property

I am a new developer to blackbberry one of the tasks I am trying to get a handle on is the use of the rimpublic.property file.
When I run the simulator for a particular device (in my case for an old 7520) I need to change a setting in the rimpublic.property file, to use a particular BES server.

Which setting is this in the rimpublic.property file?
Is there a document available explaining the various property settings in the rimpublic. property file?
When running the simulator do I always need to have a local MDS or can I used the MDS service on a test BES server on our network.

your help is always appreciated.
