I was browsing the wallpaper section when I saw a member had his icons listed along the left side and he/she had an unchecked email. Part of the email was (the unchecked one) was showing or atleast who it was from rignt underneath the icon. I really would like to know how I can change my settings so I can see who sent it and if I need to check it immediately.

That's called a Today or Today plus theme.

Is that a setting I can choose? If so how?

Go to Options >Theme and see if Dimension Today is listed.
