Currently an 8320 user, but parent is getting an 8120. With the Curve, you can press ALT+DEL+CAPS to do a reset. Does it work the same way for the 8120? I know the earlier Pearls couldn't do this.

No, that doesn't work on any suretype device. Pulling the battery works best. There is an app called SoftReset that does this programatically but it doesn't work well with 4.5 so it's not an option in all cases.
