I am trying to create a speed dial # and I need to do a hard pause and soft pause. How can I do this on the 8100?

What you have to do is add the hard and soft pause into your phone book entry and it will carry over into the speed dial list. To creat the speed dial #, just hold the # key you wanna use and then select the phone number from your address book.
