Is there anyway I can either create folders where there is a seperate inbox and outbox... or can I set it so that I just see the incoming messages, not the outgoing?

Yes. Upgrade your Pearl to OS v4.2.1.66. There is a sticky thread at the top of the 8100 forum with links and lots of info.

In your sms folder hit Menu then go to Options then General Options and choose to HIDE Sent Messages. then you wont see sent msgs anymore
