I have a few questions.

I didn't know about the DST 2007 Patch for the Pearl until the other day.

I manually changed the time on my phone, I am about to go home, backup my BB data, and apply the new patch, and restore the backup stuff to it.

Should I put the patch on there now?

If you've gone this long, I'd wait and do just like your steps say. You should be just fine.

So should I or should I not install the DST patch after installing the new software and restoring backup stuff?

You should. Follow the steps that you posted in the initial post and you'll be fine. Sorry, should have maybe clarified that.

I don't understand why you are backing and restoring after the DST patch, though, that is not required for a DST patch. Just go the site FROM your BB browser, and it will automatically detect your BB device and model, etc...
