How do I disable new messages from being created when there is a missed call? Since it already shows in my call log a missed call, this is overkill for me.

Press "Send" key once you are in the call log screen click for "Options", once in Phone Options screen click on "Call Logging" and it's all in there. Hope that helps!

this is not what I need though. What I meant is that I don't want anything in my "messages" section notifying me of a missed call. Since I can see it in the call log already (I'm using a Today theme). I tried to find it but I couldn't figure it out. Is it possible to not have those generated?

As Darius said, to stop call logging in your messages folder:

Phone > Options > Call Logging > None

Should do the trick.
