You won't be able to.
You need Windows running BlackBerry Desktop Manager.

What kind of Mac do you have? If it's Intel based, then you should be able to use some sort of virtualization product (Parallels or VMware) to get Windows installed on it.
It'll be an expensive option, since you then need to purchase said virtualization product in addition to purchasing Windows.

Your best bet is to find a friend with a Windows computer and do the OS update from their machine.

You will need a friend who has a PC! I have helped a few of my Mac friends out. Just swallow your pride and ask them!

I have a mac laptop and desktop and went mostly mac two years ago. I still have 1 PC notebook that I keep around for my BB, and my Garmin GPS. Mostly it stays in the closet.

Garmin has a Mac program in beta. Hopefully someday RIM will follow suit.

It's possible to sync a BlackBerry to a Mac using the PocketMac program but you can't perform an OS update or downgrade on a Mac unless you've got a dual boot running Windows. Performing an OS update/downgrade requires using the Desktop Manager which is only PC compatible.

Not sure what you mean by this.
The BlackBerry is supported on a Mac, by RIM and other software vendors.
PocketMac simply isn't as full-featured as Desktop Manager.

Not anymore.
When I did, I used Missing Sync with my G4 Powerbook.
