On my new 8310 I can push down button and hold and asks me if I want to assign speed dial #...and can ssign from address book. How do I edit/delete/re-assing them ? Is there somewhere in the phone to see the list ?

Click on the phone/Call Log icon, then click the wheel and click Edit Speed Dial List.
