What are the consequences if one forgot to delete the vendor.xml file before installing a new update?? Everything (I assume) loaded properly and is running very good

If its from the same carrier, then you did not need to delete the file in the first place.

The vendor.xml will tell the Loader only to load the OS to certain brands of devices. That's all it does. if the OS loaded with it installed then either it was empty or the OS was from the carrier that is branded on the device.
