I have a 8310 with BES. For some reason my contacts all from Outlook are all on my phone. Example, I have my regular Contacts list folder in Outlook on my phone - thats ok. But I have another folder of personal contacts list folder and thats on my phone as well. How do I setup this up so I can only sync (and see) my main 'Contacts'

If you use wireless sync for contacts you will have all folders that are under your main Contacts folder in Outlook on your Blackberry. The only way I know around it is to use Desktop Manager to sync contacts via USB

You can get around it by moving the sub-folders up a level. In other words, instead of having them as sub-folders of contacts, they will be sub-folders of the Main Personal Folder. If you have several, you may want to create a sub-folder of the Main Personal Folder and call it something like "Other Contacts" and then put them all under that.
