I am having this problem since last three months when I purchased my 8310. Right in the middle of the call the handset will reset and it would take a good 2~3 mins before I am able to dial again. Also the call log would not be updated.
Tried doing a hard pull of the battery as suggested on BBF[removing the battery while still on] and then putting it back after 5 mins. It did not help much. Went to Options -> Security Options ->Memory cleaning and changed status to enabled. Did not help either. Also after each reset this status defaulted to disabled.
Then figuring this is a battery problem it could be related to backlight. Went to Options ->Screen/Keyboard -> reduced backlight brightness to minimum, backlight timeout to minimum and automatically dim backlight to Off. This has definitely reduced the frequency of resetting significantly.

How much memory do you have left immediately after a soft reset?

Options > Memory

Options > Memory
I think you mean Options > Status.

No, I didn't, although that's a good place to look also. I'm asking the OP to check the "Free Space:" figure under Memory.

Hmmm. I guess in OS 5.0 they changed the choices in Options. In OS 4.5, it is Options>Status to look at the File Free size.

Default Unwanted Reset - maybe a resolution.

FWIW...

I had an 8320 on T-Mobile. All of a sudden, it started the rest problem usually in the middle of a call.

After a few weeks of reloading the OS (various versions), unloading/reloading applications I finally took it into the store (it was a year old).

They replaced the battery and it never reset again. The phone is 2yrs old and I just 'retired' it for the 9700.

You may want to try replacing the battery.
