I just bought an 8300. Love it. The Standby button on the top is essentially a "lock key?" Is this the only function?

It also is a "mute" key. Standby isn't quite the same as lock. It's pretty much the same as putting it to sleep using the sleeper function las with the holsters.

Do all the functions work in standby mode? Phone, email, notifications? Thanks

Yes. It works just as if it's in the holster with the magnetic sleeper function.
