That's the way it is. That is how BlackBerry works, by design.
I think it is pointless, but if you want to edit/add/delete contacts (a name and a number) on the SIM, open the address book. Then open menu within the address book app. Select SIM Phone Book. Open the menu. Select new, edit, delete, as desired and go from there.
