I'm new to Blackberry and I haven't been able to find anything to explain how to acomplish 3-way calls. I can have one person on hold and another active, but I can't "link" the two calls. I'm sure there is a certain way to do this, but I can't find it in the manual.

Search the forums for my tip list. Use the 72xx ones until I get my 8700 and update it. Except for the phone you might check out the 7100 ones too.

I think when you have them on hold you click the trackwheel and there is an option to join them, I can't remember. It seemed pretty stright forward last time I did it though.

Doing a 3-way call should be the same way in all older models because the phone app has not been changed. So when you dial one number and click the trackwheel and select New Call and make that call and while you dial the new call it will put the current call on hold and then it will give your the otion to either join the calls or swap between them.
