How does the 7250 compare to the 8700? Trying to decide whether to get the Verizon 7250 now or wait a few months (hopefully a few months) for Verizon to introduce the 8700. Is the 8700 really a substantially better device?

In my opinion, yes. EDGE and more memory make this an overall great device. It is the best of the 7100g and the best of the 7290. Research them both and check it out.

As for Verizon, that is for you to decide on. Is it worth waiting ? Most Crackberry addicts would say yes?
