How do you rearrange or get rid of things off the main screen? I just want to put things in a better order for my use...Thanks.

Highlight/bracket the icon you want to move, then press ALT and the trackwheel at the same time. You should see a Move Icon option.

There are also Options for Hide Application "to get rid of things off the main screen" and Show All to see them again.

What if I want to take something out of a folder and move it to the main screen?

Sorry, you can't do that. It's the theme that decides which applications go "in the folders" and which show up on the desktop. Personally I use the Zen theme, it puts 5 icons on the main screen and the rest in the applications folder. If you use more than 5, then you have to either live with some of them being in a folder or Make your own theme.
