1. The reason that Wi-Fi and other new features are not included is simple, it takes time to put those things into development. The phones coming out today are using the features requested months or years ago. So if you want Wi-Fi or SDHC or A2DP Bluetooth or any other new feature, remember that stuff needs to be worked into a feature set.
2. As Blackberrys become more mainstream, more user friendly features will be built in, IE a camera, mp3 player, etc.
3. Carrier restricted phones, like how the RAZR was only on Cingular, or the Pearl was only on T-mobile, are licensing agreements between the manufacturer and the carrier so they can entice customers to be loyal or switch to their service. Those agreements are only temporary. The 8800, just like the Pearl will be out on both Cingular and T-Mobile as soon as those agreements expire. If you feel you need to stick with your carrier, go buy the phone, pay $40 and unlock it, then use whomever you wish.
4. If your on CDMA, that has more to do with the carrier wanting that model in their stores or not. With Blackberrys becoming more mainstream and highly desired items, its more likely that your carrier will add a model or two to keep current with competition.
