It's loud as hell and I can't figure it out....

Options > Screen/Keyboard > Keytone = OFF.

When dialing a phone number from the Phone Dialer, you will still hear faint dialtones.

OK, it was set to OFF by default - however, faint is not what is heard - dialing a number from the keypad is plain loud and intrusive if in a meeting

Yep, you got the "look at me, I am dialing my BB/phone when I should not be" tone.

lol, best you can do, in a meeting other super quiet times, is enter your phone number to be dialed in the address book or the notepad and dial perfectly silent from there.
