If you access the mail application and on BES (which is my only experience here) then you should be able to view the Sent Items folder as it syncs with Exchange. However the Deleted Items does not (even though there is a folder there.) You'll find that to be the case on all of your other folders (except Inbox and Sent Items which is the default.) All messages deleted on the Blackberry are deleted and not moved to Deleted Items. I'm pretty sure this is done in the interest or saving space.
You can add other folders to sync (redirection) under the Desktop Manager and Email Settings. Click Advanced and under Folder redirection click Selected folders then choose the folders you want to be able to view the contents. This is particularly helpful if you have Outlook rules that redirect mail to certain folders by default that would not show up in the Inbox (especially server side rules.)
This will apply to all future messages and so far you'll get a copy in your Inbox as well as the specified folder. This may or may not be desired depending on the interest of the message. When you delete the item in the Inbox it will delete it from your folder. Whether this can be changed or not I'm not sure and I've honestly not taken the time to dig too deeply.
