I try to keep my app memory around 86 to 90 but I really like try new apps. How low can I get it before my phone starts acting up? I'm actually very impressed with what I can keep without using to much memory.

The 8900 has more memory than any other BB (well, the same as the 9700). I'd say if you had more than 20mb free you'll be fine.
