I've noticed if I have someone listed in the Contacts, and i get a call from them from a different number and I try to add that number to the contacts I don't see an option to add it to an already existing contact, but rather to enter it as a new contact. Is there an option to add it to an already existing contact?

I've not found it if there is. I just copy the number and paste it in the contact. Couple extra steps, but I never typo it.
