I presume you've checked hidden icons?

I've had the same problem. Deleting the email account and recreating it on the device will bring back the Yahoo icon on the home screen. However when I do a battery pull the icon is lost again. My yahoo account is not synching correctly the way it was before I upgraded and I shouldn't have to recreate the account every time I do a battery pull. I'm guessing there is a glitch with the latest OS. Hoping somebody can confirm or a fix is released soon

press the menu button
then press it again - show all
If show all doesnt appear, there are no hidden icons.
when you click show all, you will see some icons that are grey or "ghosted out"
these are hidden
to unhide you highlight a grey icon, click the menu button - hide (hide will have a check mark next to it when on a hidden icon)

The issue that I have is not with the icon being hidden. The problem is that the icon does not show the Yahoo symbol but rather is a generic email icon with the email address listed under it

Thats true.
I didnt know yahoo did this to begin with, but if they did, then perhaps they've stopped.
any email address setup with BIS generally has a generic mailbox icon.
