My tour stopped automatically opening text/email/bbm/mms/etc upon taking it out of the holster. Does anyone know where the setting is or what could be wrong?

What do you mean looking at my profile. There's no 'edit' option for profiles. You mean just to click the speaker (profile) button and pull the battery when the list appears.

Go to the "Advanced" menu item in Profiles to review your profile settings. I would try the battery pull first, though.
