Please can anyone advise me if there is an IT policy that I can send to our new Blackberry Bold devices from BES to remove the twitter/facebook/Youtube icons as we don't really want our users to be using these apps on a work device.

You can't remove the icons as they represent service books pushed by the carriers. You can hide them on the device itself but if you remove them they will simply reappear when he carrier pushes them back onto the devices.

You can disable these apps through an IT Policy, but I don't believe you can make them vanish.

Rambo is correct - you cannot remove the carrier-pushed service books via the BES IT Policy, you can only disable use of the app via the IT Policy.
