Is there way for me to add symbols on BlackBerry's symbol manually?

Do you mean to edit the symbols list one gets when pressing the symbol key? i do not believe there is a way to edit that.

Yes, I would like to add some smiley on symbol menu.

Emoticons/smileys are available in the BBMessenger and JiveTalk applications. They are not so for email.

BBMessenger - Press Symbol key twice
JiveTalk - press shift + symbol key
