When I lock my Pearl by holding down star it won't unlock using the trackball. It just seems to refresh the lock screen

That's the way it works.

Personally, I use standby. Press and hold the mute key on the top of the device. That will lock all the keys so it can slip in your pocket. When you want to use the device simply tap the mute key again.
