Once you remove the SIM and wipe the phone there is no way for them to access any of your data or accounts.

Wiping removes the service books, and they only go to the Blackberry you designate. If you enter the IMEI and PIN of the one you sold into the "change device" section at MyTMobile then you would push the service books with your email back to that device. But aside from that major mistake (pretty tough to make), no. The new user can't get your email.
