Default e-mail help

I am a small business owner and we just "installed" a server running SBS2003. Our e-mail is now hosted on the server in lieu of a 3rd party and when we switched it over today, we stopped recieving e-mails on our 8310s. Can anyone help me reconfigure my e-mail accounts.
