While composing an email, what button do I press after entering an addess in the "To" field? Return makes another "To" field; so does pressing the click wheel.

Not sure what you mean. What are you trying to do? The extra To: won't hurt anything if that's what you're talking about.

Just scroll down to the text field and start typing. That extra "To" field will disappear when you send the message without filling it in.
