I was just thinking, I would like to update my OS, but probably shouldn't go for that 40 minutes it takes without people being able to get ahold of me. If I were to put my sim card in my old phone for the time being, could I still upgrade my new one without the card, and then put it back in once its all finished? I'm assuming yes, but I just wanted to be sure

I don't see a reason why it wouldn't.

No e-mail unless you move a lot of stuff around, but voice and SMS should work.
