Default can you put a password on your memos?

I have a curve 8310 and I want to keep some memo stuff private can i put a password on it?

No, but you can put an entry in password keeper.

I.e. - not without a 3rd party app. Out of the box security is all-or-nothing.

Personally, I always just recommend putting a password on your BB and keeping EVERYthing private.
