It has to do with your provider as much as the device. I believe T-Mobile always multiple accounts and "send-from" where Cingular and their current web-client only allow one.

A workaround is if you don't mind using "Reply-To" instead, you can have unlimited email addresses now on any carrier -- Download bbReply from the Aftermarket Software forum.
However, replacing "From:" is an option only on carriers using the latest BIS -- such as T-Mobile. (multiple email addresses)
If you purchase a hosted Exchange/BES account then you can have 2 different sent from addresses. One that goes through the BES and one that goes through the BIS (web client)
Currently (as mentioned above) only T-Mobile has the ability to use multiple sent from addresses.
Does the T-Mobile ability require 4.1 handheld code?
