There are two classes of items. The first, is the crapware service books from your provider. AT&T shoves about 30 things at you. You can delete the shortcuts, but AT&T just pushes them back out. The best way to deal with them is, as Noodle suggests, is to hide them and forget them. I create a folder called AT&T Crap, stick them in there and hide the folder.
The second class of items consists of apps that you don't or won't use. I have removed things like Brickbreaker, Tasks and Voice Dialing. There are several ways to safely remove them. I use an tool called
CrackMem to remove them from the OS prior to installing it on my phone. There is also
